I have made this recipe many times and I find it works well with 8" pans. I have no problem with the lemon curd...it thickens nicely but it does take some time. I also add lemon zest to the cake...just my preference. It makes a great wedding cake!

Just enquiring whetehr or not this recipe / cake would work as a wedding cake as I love cakes with citrus flavors? I have tasted a similar style of cake in Budapest that was a poppy seed cake in one of the oldest Patiserie's in the city & loved it so this combination may be something special...?

I haven't written about it yet because I hate the photos of it! But I'll write about it soon, now that it's been requested. :)

I have made this cake several times and it turns out perfect. Hope the following helps:
1. My cake does rise enough for to get four layers from the two cakes - you do not want the layers too thick for a four layer cake.
2. Getting it out of the pan is not a problem. I use shortening and flour,
3. My filling turns out thick, like a real lemon curd. As the recipe says, beat the ingredients first - until the mixture is thick and creamy looking. You must cook it slowly over low heat until thickened - this takes about 15 - 20 min, stirring constantly.

there's just something about crunchy little poppy seeds that takes a cake to another level. and you're right--that icing does sound delicious. i'm sure i'd be forced to double the recipe--i have a bowl-licking compulsion. :)
